Adventures in Baking: Pepperjack Cheese and Spinich Stuffed Chicken Breast


When I first saw this recipe on pinterest I thought it looked kinda challenging, (especially to a novice meal cooker like myself,) but it was much to yummy looking not to pin, plus I love trying new things, especially when people doubt me.
So after insisting I could do it, and a trip to Walmart, I set about to cultivate my taste explosion...

I got to beat chicken flat, so that was fun.

I maybe overstuffed the chicken, but it was worth it!

The toothpicks where probably the trickiest part, these are from my second try so they look a lot better then the first ones.

All dressed up and ready to go!

Like I said, I may have overstuffed and over seasoned them, but just look how mouth-watering they are!

Here is the finished product served with tomatoes, peas, and roasted balsamic cauliflower and potatoes! Soooo goood!
 
I love this recipe! I've already made it twice, so you know its worth it!
